A Mediterranean gem in urban Amsterdam.

Europaplein offered something different: a crossroads between locals, conference guests and the nearby 'Zuidas' crowd.

Match 'Troef's' energy.

The new restaurant needed to carry Troef’s “buzzing” energy. Tables that fill quickly, a bar that hums, service that feels like old friends.

Express a Mediterranean, Italian-leaning menu without slipping into cliché.

A room for winemaker dinners, small celebrations and off-the-record business meetings, with its own wine library.

THE CONCEPT

Creative — Outspoken — Close to the essence.

Recognisably part of Troef, but more international in tone, with a Mediterranean focus and a cosmopolitan bar culture.

Concept

TOET is designed as a Mediterranean-minded city room on an Amsterdam corner: open, generous and quietly theatrical. Bar, dining and kitchen are treated as one flowing gesture rather than separate zones, so the room feels effortless, familiar and cosmopolitan.

Guest Experience

From the square, guests see a warm band of timber, tile and light that draws them towards the bar. The experience unfolds in layers – warm oak tables, bright window seats, more intimate corners and an elevated room for groups – allowing lunches, dinners and late drinks to coexist in one coherent atmosphere.

Layout

The layout of Toet is about creating intimate zones. With the open kitchen and bar acting as the spatial focuspoint of the plan. Dining areas shift from lively, outward-facing tables to more settled zones deeper in the room.

Circulation is direct and intuitive, allowing staff to move fluidly between kitchen, bar and seating. The layout reinforces a sense of openness while maintaining distinct pockets of atmosphere within one continuous space.

Materiality & Colour

A bold base palette sets the foundation, yet the space remains warm and restrained. Carefully layered colours and authentic materials chosen to age gracefully create depth and comfort, translating an urban, sun-warmed atmosphere into a relaxed dining room.

FF&E

Sofas, chairs and barstools are custom made as one family: rounded, comfortable forms on light solid wood frames that keep the room visually open.

The bar, host point and light objects read as sculptural, tiled volumes, giving the space clear anchors without cluttering the floor.

Outcomes and impact

Coherent story from plate to space.

Toet widens the universe: another room, another rhythm, same standard.

Brand & business

TOET is the logical sequel to Troef’s success: when the original Weesperzijde restaurant proved structurally overbooked, the team chose Europaplein to extend their reach without diluting the brand.

Both venues share the same DNA – high product quality, generous flavours, attentive service – but TOET deliberately shifts the axis towards Mediterranean and Italian influences, with its own wine program and service team.

The result is a two-restaurant brand that can welcome more guests, host different types of evenings and still feel tightly curated rather than scaled up.
